Caciotta is an Italian semi-soft table cheese with a closed texture (no eyes). Indeed, Cachotta is produced in small barrel-shaped heads, weighing 0.5-2 kg. This cheese is often sold fresh, only five days old, and is called Caciotta Fresca. There are also more mature varieties - up to 3 months old, they have a sweet-spicy taste and a dense texture. Caciotta is traditionally made in Italy in the spring when the wild flowers are in bloom.
