Extra Virgin olive oil is eaten raw, as exposure to high temperatures will lead to the loss of nutrients, and when heated above 180-190 ° C, the oil will begin to smoke. Despite the fact that the smoking temperature of unrefined olive oil does not allow frying on it (only extinguishing on low heat is possible), the smoking temperature of the same unrefined sunflower oil is even lower and is only 107 °C. For frying and baking, it is better to use refined oil (Pomace in the case of olive oil).
All the company's oils are made from olives from fields belonging to the Michelakis family, where olives with silver and green leaves look at the Cretan coast of the Mediterranean Sea. Using only traditional methods of cultivation for optimal quality and taste, as well as preserving the environment, the olives of the Koroneiki variety are grown in the fields of the family, and then harvested and selected only by hand under strict control. Olive fruits are pressed into oil in a family mechanical mill, obtaining a premium quality product.
