Parmesan cheese is a hard variety with a scaly-grainy and rather brittle structure. It has a piquant deep taste and a subtle aroma. This kind of cheese is eaten in small pieces and washed down with red wine. Grated cheese is also used for sprinkling pastes, risotto, hot vegetable and meat dishes, added to sauces, breading for fish, all kinds of salads and certain types of pizza.
