Made by hand according to the original old French technology from the milk of Alpine goats.
The cheese is covered with a crust of noble white mold that has sprouted through the ashes of fruit trees. The fragrant flowing texture under the crust turns into a tender curd pulp. The texture in the middle of the cheese is snow-white, dense and brittle, has a distinct pleasant taste of goat's milk and a slight sourness. Valence smells of champignons, hay and wildflowers.
Perfectly combined with young wine. If white, then Chardonnay, Chablis or Sauvignon Blanc from the Loire Valley. If red — Pinot Noir, Dolcetto, Barbera, Cabernet Franc from the Loire, Bonard, Mencia, Zweigelt. If sparkling, then Creman de Loire is made from Chenin Blanc, Cabernet Franc and Pinot Noir grapes.

The abundance of rivers, lakes and meadows has long made the French province of Berry a center of animal husbandry and agriculture. On this land in the village of Valence, they began to make this cheese in the IX century. According to one of the legends, initially Valence cheese had the shape of a regular pyramid. Until the Chateau de Valence was visited by Emperor Napoleon after an unsuccessful military campaign in Egypt. The owner of the castle, the Prince De Tailerand, the Minister of Foreign Affairs of France, served Valence cheese made by local peasants to the emperor's table. And the shape of the cheese reminded Napoleon of the pyramids of Egypt. In a fit of anger, Napoleon cut off the top of the cheese with his sword. Since then, Prince Taileran has ordered Valance to be made exclusively in the form of a truncated pyramid.
However, there is a simpler explanation. In the village of the same name Valence there was a bell tower without the church of Eglise Saint—Jean. The temple was burned down during the wars, and the bell tower, shaped like a truncated pyramid, was the tallest building in the village for a long time. Since then, almost all cheeses produced in Valence have had a shape similar to a bell tower. Perhaps the story of the enraged emperor was a kind of "marketing ploy&the Prince De Taileran, but the cheeses, which the emperor himself drew attention to, have since gone to the most noble aristocratic houses of Paris.

Storage conditions
The cheese maturation process lasts 5 weeks, during which time its texture softens in the direction from the crust to the center and becomes more fluid in mature cheeses. The young cheese has a fresh lemon taste. In the mature Valence, you can hear notes of nuts and goat's milk.
