Description
Brie with walnuts is a delicate cheese with a creamy taste and a characteristic subtle nut-mushroom aroma. Traditional brie is made by hand from live cow's milk using Penicillium Candidum culture, which gives the famous noble mold on the surface. Penicillin crust and walnut inside a plastic texture - the combination of these characteristics creates an original flavor range and gives the product a subtle mushroom aftertaste. Brie, like other cheeses with white mold, ripens in the direction from the crust to the center. The taste of a young Brie is very soft, and a mature one is sharp and multifaceted: there are shades of fruits and nuts in it, and the crust has a slight ammonia smell. The history of Brie cheese began in medieval France, in the village of Meaux, near Paris. One of the first documentary mentions of Brie cheese is the chronicle of the Frankish emperor Charlemagne: in 774, he stayed in Brie and tasted the famous local cheese even then and left him the most flattering review: "I just tasted one of the most exquisite dishes." Brie has always been marked by royal love and even according to legend caused the death of one of the kings of France. Louis XVI, who, like many kings, was a great gourmet and connoisseur of cheeses, tried to save his life by fleeing in 1789, at the beginning of the Great French Revolution. Driving past the village where the most delicious Brie in France was made, Louis could not resist and asked to stop the carriage to try his favorite cheese for the last time. This delay cost the king his life: he was caught, taken back to Paris and executed. Of course, this legend is far from the generally accepted historical version of events (Louis was found out and arrested in Varennes, in Lorraine, which is 210 km from Meaux, at that time a considerable distance), but the people persistently retell this parable about the gourmet king who lost his crown and head because of a piece of Brie cheese. Brie should be brought to room temperature before serving, so that the aroma is fully revealed. Its combination with a crispy baguette, croissants or a white cracker will reveal the special taste of Brie. This is a classic way of eating a delicacy in French, which will not interrupt its taste qualities in any way. Fresh and dried fruits, ripe berries, nuts, honey and confections will harmoniously complement the taste of cheese. Brie from "Ko&Co" is made by hand from cow's milk according to the original old French technology. The cheese is packed in a special paper for maturing cheeses with white mold, which is produced in France. Such packaging ensures proper storage and further maturation of the product in the refrigerator. Brie with walnut will perfectly complement dry white, semi-dry wines from southern countries, for example, Chile, Argentina, Spain. In particular, Chardonnay and Chenin Blanc, Verdejo, aged in a barrel, are well suited.
