Adjika is a Caucasian hot-hot seasoning made from ground red pepper with the addition of spices. Adjika is used mainly in the cuisine of Georgia, the Caucasus, Transcaucasia, Abkhazia and Mingrelia. This spicy seasoning is served with dishes of meat, vegetables, poultry and fish. The most common variations of adjika: red, green, freshly prepared and dry. Red adjika is served with various soups, borscht, chicken, baked or fried meat, dishes made from vegetables, eggs, rice, walnuts, and beans.
