Description
Rye baking flour is made from selected grains. Peeled rye flour has a dark cream color and a non-uniform texture consisting of small particles of grain and large, well-visible remnants of the grain shell. This is the most useful kind of flour, since whole grains are used in its manufacture together with the shell.
Traditional and special breads, lean pies and pies are baked from rye flour, pancakes, tortillas and cookies are made. To obtain a homogeneous fluffy dough, the flour should be sifted.
